we heart kid activists… and roasted garlic!

Made roasted garlic today, I’m in love with it! And while looking up cooking times, I stumbled upon this video by the youngest TED speaker I’ve ever seen; an 11-year-old slow food advocate! Best quote ever: “A while back I wanted to be an NFL football player; I decided that I want to be an organic farmer instead.”

 

Now onto the garlic!

 

Roasted Garlic

(Raw garlic’s totally mellow cousin.)

 

Roasted Garlic 2

Preheat oven to 400˚F. Cut tops off garlic heads. Wrap half-way in foil.

Pour a smidge of olive oil over the garlic, using your fingers to ensure the tops are evenly coated.

Close foil over the top of the garlic.

Roast until the garlic is a rich golden brown, about 90 minutes. In the picture the cloves are so soft they’ve begun to pop out!

Roasted garlic can be used for a variety of things. It’s great spread on bread or crackers (here overtop chevre). For dinner tonight I put a few cloves in the blender with some olive oil and put it over pasta. So good!

    I heard a little kid ask a stranger where she could find a compost bin the other day to put her banana peel in. It made my day.
